One of my favourite memories is when I was working on my big, green fish van. Many years ago a young boy, about ten years old, came up to me in Monmouth market and asked how much fish he could buy for £3. I picked out my biggest trout and he took it home. The next week he brought me a printed out recipe and showed me what he had cooked for his grandad and himself. He was so super proud and I felt very humbled . So I can't promise you your trout will be £3, the young boys’ never was but I can promise you will enjoy it just as much as he and his grandad did.

Ahh the prince of the flat fish. It has gleaming flesh that retains it's bright-white appearance when cooked a firm meaty texture with large flakes and an exquisitely mild flavour. Bake whole on the bone for the best flavour, but if you prefer fillets it's better to steam or fry them to keep the fish lovely and moist. Whatever you do, you are going to end up with very satisfying smiles around the table. Although it's not the cheapest fish on the counter, the Turbot is a delicious treat.
Penclwdd Cockles are fully sustainable in fact they still use the rake and riddle to collect these delicate sweet tasting creatures .These are fresh cooked and shelled cockles, ready to eat or re-heat.

For best results dust in a little seasoned flour and cook from frozen. Deep fry in small batches in preheated oil at 180 for 2-3 minutes, drain on some kitchen towel and serve with a wedge of lemon and garlic or mustardy French Mayonnaise, which you can also find in our larder.
